Love the fresh mint from my garden

I love this salad especially in the summer time with the fresh vegetables from my garden. I make it every time I have company over, its healthy and filling at the same time with the pita bread, the fresh mint and thyme. The most important ingredients in this recipe is the ground sumac spices and the pomegranate molasses. ground Sumac spice has a citrus taste to it and the pomegranate molasses has the combination of sweet and citrus taste. You can substitute the pomegranate molasses with lemon and white wine vinegar.
1 teaspoon ground sumac
2 teaspoon pomegranate molasses
2 to 3 tablespoon of fresh lemon
2 small gloves of garlic, minced
1/2 to 3/4 cup of extra virgin olive oil
2 teaspoon white wine vinegar
Combine spices with the rest of the ingredients and add salt and oil gradually. Add more lemon juice, vinegar or pomegranate molasses if desired
2 to 3 cups parsley leaves (equivalent to one whole parsley). if leaves are too big you can it but not too thin
2 to 3 cups to romaine lettuce
5 radishes cut thin slices
11b Persian cucumber or what you have available at home
4 tomatoes on the vine cut into medium size pieces
1 small size green pepper cut into medium size pieces
6 or 7 scallions thinly sliced
1 cup fresh mint leaves
1/2 cup fresh thyme leaves
3 8" diameter pita bread cut into square shape and toasted in the oven with olive oil or fried with vegetable oil.
Prepare the pita bread ahead and set aside. prepare and cut all salad ingredients then add dressing and mix all together. Add pita and toss gently and you can add more sumac or salt if desired. Enjoy
