Lentil and Rice with Fried Onion: Moujadara Lebanese Recipe

The cooked lentil or Moujadara is a popular dish in the Middle East, it is generally made of brown lentil and rice or bulgur (wheat) with cumin seasoning and topped with fried caramelized onion. This meatless dish is served with salad or yogurt and I like it with some pickles too!!!

Summer Salad with Fresh Mint

I call this salad a summer salad because I use fresh mint from my garden. Its very easy to make and has only 4 ingredients, tomatoes, cucumber, onion and fresh mint and for extra taste you can add also green pepper. With all my salads, I use fresh lemon or vinegar and olive oil only as a dressing..

3 or 4 medium size tomatoes cut into medium size pieces
3 cucumber cut into thin layers
One small onion 
1/2 cup of fresh mint leaves
Juice of one fresh lemon
Olive oil
Mix all ingredients and enjoy....

I Chose this one pair of sandals which comes in two colors, black and whisky. You can wear either one with any of the four pencil skirts. Personally, I like both sandals. Orange Blossom Syrup-Ground Recipe

Since tomorrow is Sunday, I'm in the mood for some deserts!!!I'm going to make this syrup first today and will have it ready for tomorrow, anyway this can be prepared 2 to 3 weeks in advance and can be stored in the fridge.This syrup recipe can be used with almost anything, on top of cakes, pies and especially with BAKLAVA and Katayef, a Lebanese desert (pancake filled with creme or with walnut) and topped with this syrup, recipe to follow...

2 and 1/2 cups of sugar
2 cups of water
2 teaspoon of lemon juice
2 teaspoon orange blossom water (from any middle east market)

Mix sugar, water and lemon juice in a pan on medium heat. Once it starts to boil, turn the heat to low and let it boil for about 18 minutes. If you like a thick syrup then let it boil for an additional 2 to 3 minutes. Turn the heat off, put orange blossom water, remove the pan from the heat and set aside.

Tabouleh Recipe-Lebanese Salad

Today I'm in the mood for some tabbouleh, this is my mom version, which is I believe is the best. She taught me how to soak first the bulghur (wheat) with chopped tomatoes, lemon and onion and that will bring up all the flavors. Personally, I like to make it and eat it the same day and never use the food processor to shop the parsley.

2 bunches of parsley washed and chopped finely with stem disregarded
small onion, sliced thin
1 cup of fresh mint leaves washed and finely shopped
4 medium size tomatoes finely diced
2 to 21/2 tablespoon bulghur
1/3 cup of olive oil
juice of 1 and 1/2 lemon
salt and pepper
Romaine lettuce leaves or grape leaves for serving and decoration

Soak the bulghur with tomatoes, onion, lemon and let it sit while you chop the parsley. After you slice the parsley and the mint, mix all the ingredients and add olive oil, salt and pepper. Serve tabbouleh with romaine lettuce leaves or grape leaves and enjoy.
