Lentil and Rice with Fried Onion: Moujadara Lebanese Recipe


The cooked lentil or Moujadara is a popular dish in the Middle East, it is generally made of brown lentil and rice or bulgur (wheat) with cumin seasoning and topped with fried caramelized onion. This meatless dish is served with salad or yogurt and I like it with some pickles too!!!




Ingredients:
1 cup of rice
1 cup of brown lentil
3 or 31/2 cups of water
salt
2 tablespoons of olive oil
2 medium size onion chopped
2 tablespoons of vegetable oil

Preparation:
Use a wide saucepan, coat the bottom of the pan with vegetable oil and place it on a medium high heat. Add the onion pieces, lower the heat to medium and keep stirring for about 5 to 10 minutes until the onion turn to brown color. turn the heat off and set aside.
Place the brown lentil in a saucepan on medium heat with water, once the lentil starts to boil, add the rice (make sure that you wash the rice first) with salt and olive oil. When rice and lentil are cooked, turn the heat off and serve with fried onion
