It has been busy and fun weekend, Ghada came over from New Jersey and we had a blast!!!! we worked on the vegetable garden on Saturday which we would share in a separate posts step by step. We went to the beach, could not handle the water it was freezing!!! and we end up making this Kabob barbecue with vegetables (mushroom, green and red pepper and onion) which we serve it with Fattoush and Hummus. Also, will share the beef kabob recipe in a separate post
2lb lean ground beef
1 whole parsley chopped
1 medium size onion chopped
salt and pepper
red pepper (optional)
In a large bowl, mix the meat with the other ingredients, let the kofta rest in the refrigerator for about 30 minutes or 2 hours to marinate.
If the Kofta is sticky, you can wet your hands with water when you put on long skewer and make it as a long cigar.Cook over charcoal or gas grill and enjoy..
