Superbowl party menu: Tabouleh, Hummus, Chili, Chicken wings and Chicken quesadilla




What a delicious menu to make for the Superbowl party last Sunday. Chicken wings and Chili are must have dishes for the Superbowl every year but this year I made some changes and decided to add Tabouleh and Hummus (favorite 2 dishes) with Chicken quesadilla. Took me about 2 hours to have everything baked and ready to serve, not bad!! What is your favorite dish from this menu??

Chili:
1 can of red kidney beans
2 medium size tomatoes
1 green pepper chopped
1 cup of chopped celery
1lb ground beef browned
3 tablespoon or more of chopped green onion
1 small can of tomato paste
Chili seasoning packet or cumin and hot pepper
Shredded mozzarella or cheddar

Brown the ground beef first and season with salt and pepper then remove from pan and set aside. put the rest of the ingredients in the pan with half cup of water or more, let simmer for 20 minutes then add the ground beef with the onion and let it simmer for another 5 minutes. 



Chicken wings:
4 to 5lb chicken wings
1/2 cup honey
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup granulated sugar
3 tablespoon chopped green onion
Mix all ingredients and marinate the chicken overnight then bake covered in the oven on 400 for about half hour then uncover and bake for another hour or less.

 
Chicken Quesadilla:
1 bag of  flour tortilla
1 onion chopped
1 green peppers chopped
2lb of chicken breast or chicken tenders chopped into small pieces
salt and white pepper
2 to 3 tablespoon of pasta sauce
one bag or more shredded mozzarella cheese

Fry the onion and peppers with vegetable oil then set aside. Fry the chicken and season with salt and pepper then mix with onion and peppers and the pasta sauce, set aside and let it cool. Open the flour tortilla and put 2 to 3 teaspoon in the middle of the tortilla, sprinkle cheese then roll the tortilla bread. Brush each one with vegetable oil and bake in the oven for 15 to 20 minutes until its golden brown.
