Veggie pasta

This light pasta dish is perfect for a late night snack. We used Zucchini and frozen vegetables but you can add any kind of vegetables, eggplant, broccoli or peas

One big onion chopped
4 cloves of garlic chopped
3 large zucchini chopped 
1 green pepper sliced
1/2 bag of frozen vegetables
2 teaspoon of tomatoes paste
1/2 cup of pasta or tomato sauce
1/2 cup of chicken broth
Parmesan cheese
salt and pepper
3 tbsp of olive oil

Cook the penne pasta first and set aside. Fry the onion, garlic and pepper with vegetable oil then add the zucchini and saute for 5 minutes. Add the rest of the ingredients and let it cook for about 10 minutes then add the pasta, remove from the stove and sprinkle Parmesan cheese. Bon Appetit
